FOOD COST DETECTIVE

Chocolate milk — fresh milk vs reconstituted vs UHT

What was changed to lower the cost, and what that does to taste, texture and nutrition.

What changed to make it cheaper?

Raw milk → water + milk powder (skim or whole); chilled pasteurised → sterilised ambient

Why it is cheaper Using powder (ingredient and storage) and UHT ambient distribution (logistics and waste) are different savings. The actual cost split is not public, so only cost drivers are shown, not amounts.

What the maker gains Long-term ingredient storage and scheduling · Less cold-chain logistics (UHT) · Less waste from longer shelf life (UHT)

Caution Ingredients can change within the same brand; check the raw-milk percentage and powder use when buying.

01Quick answer

Why it can be cheaper
Powder is easy to store and ship and reduces reliance on fresh milk. UHT saves on distribution (cold chain, waste), not on ingredients.
Taste
Powder bases can taste less rich or slightly powdery; UHT can add a cooked-milk note from heating.
Nutrition
Fat can be lower, but added-sugar differences between products usually matter more.
Blood sugar
Look first at total carbohydrate and sugars (g) per pack, not whether it is reconstituted.

02What changed?

Chilled chocolate milk from fresh milk

Legal typeProcessed milk (가공유)

Raw milk + cocoa, sugar etc. → pasteurised → chilled distribution

Chocolate milk from whole milk powder

Legal typeProcessed milk (가공유)

Water + whole milk powder + cocoa, sugar etc.

UHT chocolate milk

Legal typeProcessed milk — sterilised

Fresh or powder base → ultra-high-temperature sterilised → aseptic pack → ambient distribution

Chocolate milk from reconstituted skim powder

Legal typeProcessed milk (가공유)

Water + skim milk powder (+ milk fat or cream) + cocoa, sugar etc.

Legal types follow the Korean Food Code; read them before marketing names.

03Why is it cheaper? — cost mechanisms

Using powder (ingredient and storage) and UHT ambient distribution (logistics and waste) are different savings. The actual cost split is not public, so only cost drivers are shown, not amounts.

Seoul Milk chocolate milk ingredient change (reported June 2025)

Per the report, the chocolate milk previously contained 76.8% raw milk, and from June 2025 part of it was replaced with purified water and skim milk powder. The company said it uses domestic skim powder made in-house from domestic milk, that nutrition and cost are unchanged, and that the change improves preservation and distribution efficiency. 뉴스웨이 — 서울우유 가공유, 원유 줄이고 탈지분유 넣었다(2025.6.4)

Where cost is not public, only cost drivers are described, never amounts.

Includes study evidence — UHT’s cooked note is documented in studies as heat-generated volatile sulfur compounds; powder and richness notes are typical tendencies.

07Texture difference

Fat content and stabilisers drive viscosity and settling.

08Nutrition

Chocolate milk is usually legally “processed milk” with ≥4.0% non-fat milk solids. Fresh and powder-based versions can share the type, so read the raw-milk percentage and nutrition panel together.

09Blood sugar & health

Skim milk powder does not automatically make it worse for blood sugar; added sugar and total carbohydrate vary far more between products. Serving size, fat and protein, and individual response also matter.

No ingredient name alone makes a food “worse for diabetes”. Look first at total carbohydrate, sugars, serving size, fat and protein, and remember individual responses differ.

Converted at 4 g per teaspoon of table sugar. Label sugars can include naturally occurring sugars such as lactose.

12Cheaper does not always mean worse

UHT does not mean cheap ingredients — there is 100% raw-milk UHT milk — and it cannot be called nutritionally inferior by default.
